Whole30 Vege-Beef Soup


Time to make it through Winter friends, strong and healthy!

One-pot meals are my favorite and especially soup.

This is crazy, easy and only uses whole, fresh veggies, beef and spices. No canned goods, no fuss.

Easy to warm up for later, plenty to go around for your family and friends and all the healthy nutrition your body needs; tomatoes, okra, green beans and hearty potatoes.

This recipe also includes easy instructions on “blanching” tomatoes. Blanching is when you boil something to preserve it or in this case, remove the skin. Blanching your own tomatoes allows you to use vine ripe tomatoes to cook with instead of buying canned tomatoes. I prefer this method any day. It’s easy and uses less waste and less trash. It also gets you more nutrition in your soup, WIN!

This is a Whole30 compliant recipe. Which means it is made of all whole ingredients and its guaranteed to be healthy, all around.

Blanching Tomatoes:

  1. Boil a pot of water on the stove.

  2. Place whole tomatoes in pot while boiling.

  3. Let boil 5 minutes.

  4. Cover with lid, remove from heat and let sit for 10-15 minutes.

  5. In your sink, fill a bowl with cold water. Drop hot tomatoes into cold water. Let sit 5-10 minutes.

  6. Remove the skin from each tomato and set on a plate to cut and prepare. Done!




  • 1-2 lbs ground beef

  • 2 whole baking potaotes, peeled and diced

  • 4 whole tomatos blanched, peeled and cut into pieces

  • 2-3 whole carrots, peeled and diced

  • 2 cups okra, cut odd the ends and dice

  • 2 cups green beans. Cut off the ends and cut in half.

  • 1 whole onion diced

  • 2 Tbs Paprika

  • 2 Tbs Oregano

  • Salt to preference


  1. Brown meat over medium heat, along with onion, in a large pot. Do not drain meat.

  2. When beef is cooked through and onions are done, add in 1 cup water, paprika and oregano

  3. Saute and simmer low about 10 minutes.

  4. Add in 8 cups of water. Bring to a boil.

  5. Add in all vegetables

  6. Simmer soup over medium heat 40 minutes, stirring often.

  7. Check here to see if more water is needed.

  8. Salt, stir and taste.

  9. Let simmer another 10 minutes.

  10. Spoon into your favorite bowl and enjoy!
