Whole30 Super Bowl Dip
Who says you can’t eat well and enjoy Chips and Dip too?
Definitely not me…
This dip is hearty, simple and ever so tasty. Chicken, avocado, bacon, olives, tomato’s and more. All whole ingredients, fit for anyone.
You could easily eat this as a meal or share with friends on Super Bowl Sunday!
3 chicken breasts
1 pack Naked Bacon, cooked and diced
2 tomatos, diced
1 cup chopped spinach
1 cup chopped lettuce of choice
1 small can diced black olives
1 cup Chipotle Lime Mayo by Primal Kitchen Foods
1 cup Spicy Marinade by The New Primal (similar to barbecue sauce)
Kosher Salt and black pepper
Plantain Chips (Tostones brand)
Boil chicken. Dice and mix with 1 cup Chipotle Mayo. Set aside
Remove skins and pit from avocados. Mix in a bowl with juice of 1/2 lemon, 2 tsp Kosher salt and a few shakes black pepper. Set aside.
Bake Bacon in oven on parchment paper 400* for 20-25 minutes. Remove grease with paper towel and chop into small pieces.
Dice tomatoes and place in a mixing bowl. Add drained olives and bacon pieces. Mix all together.
In a dish of choice, layer chicken on the bottom and Avocado mixture on top.
Spoon tomato and bacon mixture on top of avocado.
Top with 1 cup Spicy Marinade, drizzled all over.
Enjoy with plantain chips
