Simple Sprouts

Brussels Sprouts are my new favorite veggie and have become a customer favorite at George's Farmers Market. I add them into many different dishes and there are plenty of variations of this "baby cabbage" to satisfy any taste bud.

Sprouts are versatile and pair well with many other meats and vegetables. I prefer sausage and sweet potaotes and I even cooked them up a few times this Summer with bacon and ham. You can cut them slim to create a cool summer salad or leave them whole to bake into a chicken dish. The possibilities are endless. 

I stuck to simplicity on this one, to keep it easy and tasty. You can pair this with any meat dish or eat them solo.

The most fun part of cooking is re-creating your own dishes again and again. Trying something new, adding this or that, food fusion! So start here, with Simple Sprouts and then get adventuresome, re-create this dish to make it perfect for you and your family! My own tips and variations will be listed at the end.

Simple Brussels Sprouts

Ingredients:

  • 4-5 cups brussels sprouts

  • 1/2 cup onion diced

  • 2 Tbs Apple Cider Vinegar

  • 1/3 cup olive oil

  • 1/2 tsp Salt

  • a few shakes of pepper

Instructions:

  1. Cut the little nubbin ends off the sprouts. Then cut them in half or into quarters for the larger ones. if they are small, you may leave whole.

  2. Mix sprouts with onion in a large mixing bowl.

  3. Add in vinegar, olive oil, salt and pepper and toss together.

  4. Place sprouts in oiled skillet or baking dish.

  5. Place in 400* oven.

  6. Cook 40 minutes. Open the oven every 10-15 and toss sprouts.

  7. Done! Place on your favorite plate or bowl and enjoy!

Tips and Variations:

  1. I used to detest sprouts because they always seemed too dry and tasteless. I'v learned they need generous amounts of liquid and S&P. This is one reason why they cook up so well with meat.

  2. Add Bacon. Use this same recipe above and add in a few slices diced bacon. You may then omit the oil because the bacon provides the fat. This is SO tasty!

  3. Add sausage. This is my favorite way to eat sprouts. I could eat this everyday!

  4. Add chopped kale or diced sweet potatoes. 2 veggies at once and very hearty.

  5. You may Saute your sprouts instead of roasting them. I do this often to try new things and watch the cooking process.
