Spinach Pie

How about a tasty meat Pie? This one is a true winner and is packed full of nutrition; Spinach, Potatoes, Eggs and Sausage. These are absolutely a few of my favorite things!

This dish is Paleo, Whole30 compliant and Dairy-free.

It’s a one dish meal and can easily been taken to work for leftovers or warmed up for breakfast. I typically cook this as a brunch and then eat again later.

The Farmer loves it too, which means I don’t always get round two.

I typically cook with all fresh ingredients, however on this one, I use frozen boxed spinach. It’s all ready to cook and makes for easy prep. I’ve also subbed Kale a time or two.

I use over a pound of sausage, don't skimp here.

Spinach Pie


  • 1-1.5 lbs Whole30 compliant sausage

  • 1 medium onion, diced

  • 1 medium baking potato, peeled and diced

  • 1 box frozen spinach, thawed and drained

  • 6 eggs


  1. Brown ground sausage and onion in a skillet over medium heat.

  2. When meat is cooked through, add diced potato.

  3. Add Salt and Pepper generously, along with 2/3 cup water

  4. Sautee 20-30 minutes stirring often

  5. Drain any excess oil here

  6. Add spinach

  7. Sautee 10 minutes, stir well and remove from heat

  8. Rub olive oil in a round oven safe dish

  9. Pour in sausage mixture and smooth out

  10. Whisk 6 eggs and pour over mixture

  11. Bake in 350* oven for 30 minutes

  12. Let cool

  13. Slice and serve an your favorite plate!
