Simple Shepherd's Pie
It’s obvious I thoroughly enjoy Whole30, but I also prefer not to cook unless it’s Simple!
I prefer healthy because I need all the fuel I can get to make it day to day. I need energy, I need focus and I need all the good time I can claim as mine. Have you ever thought of making time?

I could spend extra time finding random ingredients in the grocery store, extra time sitting in a booth waiting on my food or extra time driving in town, waiting on a line of cars to move up ever so slightly.
Or, I can keep my meals simple. Minimal ingredients, in my kitchen, serving my people, time in my hands.
Time to teach, time to listen, time to be home. Isn’t home just the best?
Create the time you want in your home…and it can start with food.
I little chopping here, boil some water there, a dash of this and that, and Bingo! Dinner is served.
I think sometimes we make it too complex. Let’s leave that up to the local Chef’s of East Alabama. They are experts there. I simply want to feed my family well and maybe teach them a thing or two.
Bring your family into the kitchen this weekend. Chop up some goods and gather around your table.

2 pounds local ground beef
3-4 medium baking potatos, peeled and cut into chunks
2 large carrots, peeled and diced
2 medium squash, diced
1 cup Original NutPod creamer
1 tsp Oregano
1 tsp Paprika
1 tsp salt
1/2 tsp black pepper
In a large saucepan, brown meat over medium heat
In another pot, boil water for potatoes. Add potatoes and let boil 15-20 minutes.
When potatoes are soft, remove from water and place in a bowl.
Add chopped carrots and squash back into boiling water. Boil 15 minutes.
Mash potatoes in bowl. Add all Nutpod creamer and 1/2 tsp salt and a few dashes of pepper. Mix very well. Keep mashing and mixing until desired fluffiness. May add more NutPod as desired.
When beef is cooked through add 2/3 cup water along with Oregano, Paprika and 1/2 tsp salt. Stir well and let simmer 10 minutes.
Remove carrots and squash from water and mix gently in skillet with beef.
Find your favorite baking dish and place meat mixture all on the bottom.
Place mashed potatoes smoothly on top of beef
Bake 400* for about 30 minutes
