French Fry "Salad"

Friends, this is SO Good!! It tastes like your being naughty and cheating on your healthy habits. It's salty, crunchy, tasty and filling. And it's meatless (one less item you need to cook). I have never made this before and this is my 5th or 6th Whole30. Proof there is always room to learn and try out new things!

One of the many reasons why I love Whole30 is you don't have to measure your Vegetable intake. I will joyfully make time to cook, But I do NOT have time to measure my food and add up calories and such...not for me. Many believe that you need not eat many potatoes on Whole30 because they are carb heavy. I totally disagree here. You need them, especially if you are exercising. They sustain you and have lots of nutrition you can't get from others veges or meats. I eat potatoes almost daily. Be wise and mix in plenty of other fruits, veges and meat.

In this recipe, I used large baking potatoes mixed with sweet potatoes. I peeled the sweet, but not the regular. I used 1 TB Tessemae's Whole30 approved Caesar dressing mixed with 1 TB Olive Oil. You can find Tessemae's locally (Auburn) at Earth Fare. The Ranch is my favorite, I would have used it but I was out. 

I also found a new Whole30 compliant seasoning recently at Publix that I used to roast the Potatoes. It is McCormick brand and is called Mediterranean Spiced Sea Salt. It's yummy and I'v been using it on Chicken and Fish too!

French Fry "Salad"

INGREDIENTS 

  • 3-4 Large potatoes sliced into "fries"
  • 1/2 Avocado
  • 1 small tomato
  • Cilantro
  • Tessemae's Whole30 dressing, 1 Tablespoon (or dressing of choice)
  • 3 TB Olive Oil
  • 1 Tsp Spiced Sea Salt (or seasoning of choice)
  • S&P

INSTRUCTIONS


Preheat oven to 400*

Lay all potatoes on baking sheet and mix well with 2 TB olive oil, 1 tsp spices and sprinkle S&P

Bake 20 minutes, take out of oven and turn/toss potatoes. Place back in oven another 20 minutes. 

Place Fries on a plate. 

Top with diced tomato, diced avacado, chopped cilantro.

Mix 1 TB dressing with 1 TB olive oil. Drizzle over the top of fries.

Grab a fork and Enjoy!!
