George's Cream Corn

Farmer and I both grew up eating this summer, southern staple. His family always grew corn and they would put plenty up in the freezer to enjoy well into fall and winter. My family didn't grow it, but we had farm friends who would get us a few bushels to cream every year. I have vivid memories of shucking corn on the back porch a watching my mom cream it over the kitchen sink.


The taste and creamy-ness of this dish is truly amazing! It melts in your mouth and pairs perfectly with any and all summer veggies... peas, tomatoes, sauteed veggies, squash, fried okra, anything, you name it.

We quart up the cream corn and sell it frozen, 2 cups per quart. The corn swells a lot when cooking so you end up with more to feed hungry mouths after it's cooked. I would say one quart of our corn feeds about 3-4. When I feed my family of 5, 2 quarts is plenty. 

My biggest tips for cooking are 1.) Cook low and slow (this prevents sticking) Don't rush this dish. Take your time, the end result is definitely worth it. 2.) Taste often and make it perfect for you! We prefer less butter so you have more corn flavor. We use 1-2 Tablespoons. Some folks use a whole stick.  Start in small amounts, taste often and add as needed.

George's Cream Corn


  • 2 quarts frozen corn from George's Farmers Market
  • 1 cup milk
  • 2 Tablespoons butter
  • 1-2 tsp Salt
  • 1 tsp pepper


  1. Place frozen corn over low heat in a skillet or sauce pan
  2. Let simmer 15 minutes stirring often
  3. Add milk, butter, salt and pepper.
  4. Let simmer another 30 minutes, stirring well and very often.
  5. Taste every 10 minutes to add more butter or salt to preference.
  6. Done! Serve on you favorite plate.

This seriously could not be any easier! There are plenty of variations to this dish, this one has been our consistent favorite now for a few years.
